Happy New Year! Our Tribe is very excited for the year ahead to continue welcoming new residents, as well as serving our current community.

This past month, our first holiday season at Vineyard was truly special. We loved spending this time with our residents and creating new memories and traditions (read on for more pictures and a recap of our celebrations). In our January 2021 Newsletter, we have exciting updates, further information on our COVID-19 vaccination roll-out, as well as a fun new recipe from our Chef!

COVID-19 Vaccination Update

We’re pleased to announce that we’ll hold our first COVID-19 vaccination clinic on Wednesday, 1/13/21.

Our residents and staff will begin to receive the Moderna vaccine. In partnership with Walgreens, we’ll offer on-site immunization clinics as a part of the first priority phase for vaccine distribution per CDC guidelines. 

Thank you to our staff for their hard work to fast-track this new process, and our residents and family for their continued support!

Recipes from the Vineyard Kitchen

The New Year is often a popular time for new diets and healthier routines. If you’re looking for a sweet treat that’s also good for you, we’ve got the perfect recipe for you! Chef Pascal created this unique fruitcake cookie for our residents that’s both tasty and nutritious. Make it at home with the below recipe! 

Vineyard Fruitcake Cookie

Vineyard Fruitcake Cookie

This recipe yields three to four dozen cookies. 

Ingredients: 

  • 4 oz dry cranberry
  • 4 oz diced dry apricot  
  • 4 oz candied walnut 
  • 1 bag of 6 oz Fruit and nut trail mix
  • 3 oz honey
  • 3 oz spiced rum
  • 12 oz butter
  • 6 oz granulated sugar
  • 2 oz brown sugar
  • 3 whole eggs
  • Pinch of salt 
  • 1 pound pastry flour

Instructions: 

  • Blend all fruits, add rum and let marinate for 2 hours in a closed container.
  • In an electric mixer, cream butter, sugar, salt at medium speed until smooth. 
  • Add eggs and mix well. Incorporate flour a small amount at a time until well blended. 
  • Finally, add all fruits and nuts at low speed.
  • Using plastic film, mold the dough into a 2-inch diameter roll, make sure the film is very tight.
  • Place in the refrigerator overnight. 
  • Slice into a ½ inch diameter, remove plastic place on a sheet pan. 
  • Preheat oven to 325 degrees and bake for 15 minutes. 
  • Remove and cool before serving.

The dough molded into a roll and cut into each properly-sized cookie before baking.

 

Store in an airtight container. You can also keep cookies in a Ziplock bag in the freezer for a few weeks.

Make it healthier: You can use Stevia as a sugar alternative and/or Yuca root as a flour substitute.

Holiday Events and Happenings 

We had a lovely time celebrating the holiday season as well as New Year’s Eve with our residents. 

We had our own “Ball Drop” at 11:59 am for New Year’s Eve! We also spread some good cheer with sparkling grape juice. 🍾

Last but not least, our Tribe participated in a door decorating contest where our residents picked the winner! Check out all the creations here.

We hope your year is off to a fantastic start! We’re thrilled to have the opportunity to host a vaccination clinic this January so our residents and staff can stay healthy and well this winter.
